Butternut Squash/ Kale Sauté
A lunchtime or dinner at home fav…this is a fun way to eat Kale! Did you know one of the many benefits of Kale is that its GREAT for your teeth? Calcium helps us build strong enamel. (Fun fact: I’ve had like 30 cavities over my life and my mom is a hygienist mom!!) So any foods to make those chompers stronger sign me up.

Ingredients
About 3 cups butternut squash, chopped
1 lb ground turkey or Chick Peas
1 yellow bell pepper
1 cup onion, diced
1-2 cups kale
½ cup water
¼ cup cilantro, chopped
2 tablespoons olive oil
1.5 tablespoons ground cumin
1 tablespoon garlic, minced
1 teaspoon chili powder
½ teaspoon salt
¼ teaspoon pepper
Directions
Simple Sauté!
Heat olive oil on med-high heat to sauté onions and garlic. Next, add your ground turkey or chick-peas, cook and break apart until browned (approx. 8 minutes). Add the chili powder, cumin, salt, pepper, stir.
Add the butternut squash, onion and bell pepper (optional). Stir and cover with lid. Lower heat to med-low.
Cook until softened (add water slowly if needed to keep moisture in the pan)
Uncover, add 1-2 cups of kale (it will cook down!) if no moisture left, add 1/4 cup water and cover to steam kale until bright green and soft.
*Be CAREFUL not to overcook, veggies aren’t as enjoyable when they’re mushy, so keep an eye on your dish and keep stirring if you know your stove cooks very fast.
Feel free to serve this with avocado, crushed tortilla chips, sprinkle with mozzarella cheese, or plain greek yogurt! Different toppings make it feel like a different meal.
